I’m trying to figure out what sort of silk I could use for a jacket/blazer. Even better would be to find a type of fabric that is typically digitally printed on (not necessarily silk) that would be the right weight for a blazer/jacket.

Thanks in advance!!

Silk for a blazer needs to be jacket weight, so matka or similar suiting weight.

You can print digitally on anything with a smooth surface and the correct inks. Have a look at some of the digital fabric printing websites and see what they do.
