You could use your knit fabric stash pieces, or you could recycle some old sweater for it.
It could be in one or more colors, just pure play on your serger or on ordinary machine. For summer version use old t-shirts, or jersey scraps.
It is not just ordinary sewing, because you could play with stitches and make skirt with visible stitches or invisible. I like my serger stitches to be visible, to see the construction, and so I did make them in black contrasting color and it look like drawing lines, some kind of graphic element.
