Coifs were worn for many reasons. For warmth, they would layer coifs with hoods or hats. Working women would wear them for modesty (because other headdresses get in the way too much). They were worn to protect the head and scalp from the elements, and to protect their hats from their hair. Coifs were more washable than their hats, which were too structured, beaded, made with delicate fabrics, etc., to be washed. Since whatever they put on their head would absorb their hair oils, it was better to wear a coif under their hats.
