I have found several Burda Style patterns I can’t wait to start, but that recommend using viscose/rayon batiste fabric.

Cotton batiste seems more available in my area, though, and with more variety of colors and patterns.

I’m a newer sewer, so don’t have experience with a wide variety of fabrics yet. How much of a difference would it be to use cotton rather than rayon batiste?

There’s probably not much difference, but it depends upon the fabric and the pattern. Check and see if the pattern has a more general description of the recommended fabric characteristic to guide you. Also, irrespective of the fiber content, consider how a fabric drapes over your hand in comparison as to how Burda’s fabric looks in the photo. If nothing else, experiment with an inexpensive fabric first. You will probably have some hits and some misses, but you will have learned something about fabric choices. Hope this helps a little—good luck! ~Jen
